So we've enabled call_recording_on_demand in the dialplan. The way I thought it worked was it was *2 to start recording the call, and *2 to stop. So when we press *2 it'll start, but when we press *2 again it won't stop recording until the call has ended. How do I get it to stop recording while on the call?

Turned out to be a yealink thing. But yealink has a predefined "record" function that when tied to a DSS key works great.

It's just a DSS key, ready to go. I'm using some old crusty Yealink T27s and they have no problem with it.

Uses the SIP RFC method of telling the PBX to record. Technically the 'type' is 'Key Event' and the Key Type is 'Record'. When you press it, the recording shows up in the CDRs even if you have disabled recordings. Thankfully, users cannot modify the BLF key into a Record key so it's still locked behind handset admin.
